Roasted Shiitake Mushrooms With Onion Gratin And Yuzu Miso

These delicious morsels of shiitake mushroom with a citrusy kick serve well as an appetiser.

Prep 15 mins • Cook 40 mins • serves 4


  • 4 fresh shiitake mushrooms, stems removed
  • 12g walnuts
  • yuzu miso
  • 100g yuzu peel
  • 100g miso
  • 1 tbsp butter
  • 3 onions, peeled and sliced


Step 1

Preheat oven to 220C.

Step 2

Prepare yuzu miso. Combine yuzu peel and miso in a food processor and process into a paste. Set aside.

Step 3

Prepare onion gratin. Heat butter in a pan over medium heat. Sauté sliced onions for 30 mins. Remove from heat and set aside.

Step 4

Roast mushrooms in oven for 3 mins.

Step 5

Place 1 tsp onion gratin, 3g walnuts and 1g yuzu miso in the cavity of each mushroom. Roast for another 3 mins.

Step 6

Serve immediately.
