Zafferano cooks up fresh, colourful summer treats

Summer has arrived at Zafferano in the form of purée coloured in various shades of green. Asparagus, fava beans or green peas are cooked then blended to a thick mash, show up alongside many dishes in the refreshed menu as artfully plated shapes or swirls. A plate of Hokkaido scallops, pale purple vinegared shallot petals and yellow datterini cherry tomatoes surrounded by splashes of green pea purée (S$34) evokes memories of long sunny days. Similar to the magnificent chunk of codfish, baked till perfect, which is given a similar treatment with a buttery asparagus purée, sun-dried tomatoes and microgreens (S$58).

Equally attractive is the Acquerello Carnaroli squid ink risotto (S$32) made from rice aged to absorb a clear vegetable stock without losing its bite, making it a firm favourite with us.

The summer menu is available till mid-September.
