A tech professional by day and bakepreneur by night, Baker Kai is the owner of boutique bakery – Kai’s Fresh Bakes. Here, she shares a step-by-step recipe on how to make mixed berries bran muffins that feature a decadent white chocolate cream cheese centre.


  • 4-5 ripe bananas, mashed
  • 145 ml vegetable or rice bran oil
  • 2 eggs
  • 145 g unrefined brown sugar
  • 180 g organic unbleached flour
  • 1 tsp baking powder
  • 100 g organic wheat bran
  • 140 g mixed berries (raspberries, blueberries, blackberries)
  • 250 g cream cheese
  • 100 g high quality white chocolate, cut into chunks or drops


Step 1

Prepare the wet ingredients. In a bowl, mash bananas thoroughly.

Step 2

Add in vegetable oil, eggs, and brown sugar, and whisk well until bubbles form on the top of the surface.

Step 3

Prepare the dry ingredients. Fold the dry ingredients into the wet mixture and stir until just mixed.

Step 4

Prepare the filling. Combine cream cheese with white chocolate and mix well.

Step 5

Fill each muffin case halfway with the muffin mixture.

Step 6

Using a teaspoon, spoon a small dollop of filling into the mixture.

Step 7

Fill the rest of the case with more muffin mixture till the case is about 3/4 full.

Step 8

Bake at 180C for about 25-30 mins, until a skewer comes out clean.

Step 9

Serve warm.
