Kai's Fresh Bakes
- 4-5 ripe bananas, mashed
- 145 ml vegetable or rice bran oil
- 2 eggs
- 145 g unrefined brown sugar
- 180 g organic unbleached flour
- 1 tsp baking powder
- 100 g organic wheat bran
- 140 g mixed berries (raspberries, blueberries, blackberries)
- 250 g cream cheese
- 100 g high quality white chocolate, cut into chunks or drops
Prepare the wet ingredients. In a bowl, mash bananas thoroughly.
Add in vegetable oil, eggs, and brown sugar, and whisk well until bubbles form on the top of the surface.
Prepare the dry ingredients. Fold the dry ingredients into the wet mixture and stir until just mixed.
Prepare the filling. Combine cream cheese with white chocolate and mix well.
Fill each muffin case halfway with the muffin mixture.
Using a teaspoon, spoon a small dollop of filling into the mixture.
Fill the rest of the case with more muffin mixture till the case is about 3/4 full.
Bake at 180C for about 25-30 mins, until a skewer comes out clean.
