Gibson Cocktail Bar
In celebration of its first anniversary, Gibson Cocktail Bar has launched its most ambitious project yet: the Gibson World Collaboration Menu. Highlighting five unique cocktails developed by 15 craftsmen from around the world – from bartenders and chefs to master brewers and tattoo artists – the collaborative menu looks to offer distinctive drinks with a touch of the unexpected. First is The Gibson, a simple classic cocktail made from gin and specially commissioned sake-vermouth that uses wasabi, yuzu peel and a touch of pineapple, served with a trio of condiments. The familiar flavours of Sling It Black, with jasmine, coconut water and Thai tea, makes it a quick favourite, while the tequila and sherry Beachside Boardwalk, with watermelon granite, dill and edible sand, is a treat for the senses. The Quick Draw is a simple mix of Ron Zacapa 23 rum and fermented banana wine with a touch of salt. And last, but not least, is the Journey of the West, a robust old-fashioned style cocktail, served in a bottle containing French and American oak wood-chip to ‘age’ the cocktail, with hints of cherry, vanilla and Whiskey Barrel Aged Bitters mixed with Bulleit Bourbon infused with hojicha-tea and Guinness reduction.
