Garlic and Oregano Roasted Chicken

"One of my favorite foods in the world is crisp, roasted chook. There’s no better aroma around the house than when a chicken is in the oven. I often make this dish when I have guests by simply doubling or tripling the ingredients."

Prep 10 mins • Cook 1hr 30 mins • Serves 4-6


  • juice of 1 large lemon
  • 1 tbsp extra virgin olive oil
  • 5 garlic cloves, crushed
  • 1 tsp dried oregano leaves
  • 1 tsp dried parsley leaves
  • sea salt, to taste
  • cracked black pepper, to taste
  • 1 whole chicken (1.6kg)


Step 1

Combine lemon juice, oil, garlic, oregano, parsley, salt, and pepper in a bowl and stir to combine.

Step 2

Place chicken on a roasting tray and add the lemon mixture to coat. Allow to marinate in the fridge for at least 2 hrs or overnight.

Step 3

Preheat the oven to 180C.

Step 4

Add chicken and roast for about 1½ hrs, or until chicken is golden and cooked through.
