Corned Beef Hash

This Singapore-style corned beef hash includes sliced spicy red chillies for an extra kick.

Ingredients

  • 2 medium potatoes, peeled and diced
  • salt, as needed
  • 1 tbsp cooking oil
  • 1 large red onion, peeled and diced
  • 1 can (340g) corned beef, mashed
  • 2 red chillies, sliced
  • ground black pepper, to taste
  • 1 sprig coriander leaves (cilantro), chopped

Method

Step 1

Place potatoes in a large pot and cover with water. Add a large pinch of salt and bring to the boil. Cook over moderately high heat until potatoes are tender. Drain and set aside.

Step 2


Heat oil in a large non-stick pan over medium heat. Add onion and cook until onion is just starting to soften. 

Step 3


Stir in potatoes and corned beef. Season with black pepper. Mix evenly, then flatten slightly with a spatula.    

Step 4


Dish out and garnish with chillies and coriander. Serve with bread.
