Almonds and Dates Bread

This rustic Almonds and Dates Bread serves well as an appetiser or snack.

Prep 15 mins + 3 hrs fermentation 

• Bake 15-20 mins • Makes 6 bread rolls


  • Polish
  • 200g flour
  • 200g water
  • a pinch of yeast
  • Main dough
  • 300g flour
  • 140g water
  • 10g salt
  • 1g yeast
  • 75g dates
  • 75g almonds



• Prepare the polish in advance. Combine all the ingredients in a large mixing bowl, and mix well.

• Leave at room temperature for 6 hrs, followed by another 10 hrs in the chiller.

Step 1

Toast almonds and deseed dates. Mash them up together and set aside.

Step 2

Mix flour, salt, yeast and polish in a mixing bowl.

Step 3

Mix at slow speed till everything is well combined.

Step 4

Gradually add water and correct the hydration, if needed.

Step 5

Once gluten has formed, add in the dates and almond mixture.

Step 6

Increase speed and carry out the window pane test.

Step 7

Once done, bulk ferment for 2 hrs, and degas at the 1 hour mark.

Step 8

Portion at 145g and bench rest.

Step 9

Shape the dough into individual rounds. 

Step 10

Place them seam side up on a couch.

Step 11

Final ferment for 1hr 30 mins.

Step 12

Score the dough.

Step 13

Bake at 250C for 15 mins.

Step 14

Set aside to cool before slicing.
